How to make White Bean and Chicken Chili:

This recipe is basically a “dump and go” recipe – add chicken broth, cooked chicken, beans, salsa verde and cumin into a large stock pot on the stove. Stir everything together.

Cook over medium high heat until it starts to boil, then reduce heat to low. Simmer for 5 minutes.

Ladle soup into bowls and garnish each bowl with chopped avocado and cilantro.

How to make this chili in your slow cooker:

This is a simple meal to make in your slow cooker as well.

When I make this recipe in the slow cooker, I use frozen chicken breasts.

Place chicken breasts, chicken broth, beans, salsa verde and cumin into a slow cooker. Cover with lid and cook on HIGH heat for 3-4 hours or on LOW heat for 5-6 hours.

Remove chicken breasts from slow cooker and shred with 2 forks, then add chicken back into the slow cooker.

Mix well and ladle into bowls, adding avocado and cilantro as garnish.

FAQs

Is it safe to put raw chicken in a slow cooker? ›

Yes, you can put raw chicken in a slow cooker! Slow cookers and Crock-Pots are designed to cook raw meats. The direct heat from the pot, lengthy cooking time and steam created from the tightly covered container destroys bacteria, making slow cooking safe. You can put frozen chicken in a slow cooker, too!

Should chili be thick or thin? ›

Chili should be thick and hearty enough to be a meal on its own, but sometimes there's just a bit more liquid than you want in the pot. While you can simply keep simmering the chili, that method risks overcooking softer ingredients like the beans, losing all your nice texture to mushy monotony.

How do you thicken white chicken chili with flour? ›

Whisk together milk (any kind) and flour (gluten free, if you need it!) in a small dish then pour into the chili and stir to combine. Cover and cook on high for 30 minutes. This will give the chili just a touch of velvety thickness.

How long can you leave chicken in slow cooker on low? ›

For a whole chicken – Place it in your slow cooker breast side down. Cover with the lid and cook on High for around 4-5 hours or Low for 6-8 hours. Chili cooks low and slow, so you need enough liquid to tenderize the meat and keep everything from drying out. That liquid should also add flavor to the chili, so use chicken, beef, or vegetable stock, or beer.

Do beans thicken chili? ›

You can also choose to add more beans to the chili, mashing them first to help thicken the broth. Depending on how much you add, you may need to adjust spices and seasoning after.

What kind of onion goes in chili? ›

Sweet onions are great for caramelizing due to their higher sugar content. You can cook them into your chili, serve them raw over top, or even elevate your chili with a sophisticated caramelized onion topping! Some of my favorite sweet onions are Walla, Walla, Maui, and Vidalia Onions.

Why do you put baking soda in chili? ›

Ground Beef: Provides the hearty meaty base for the chili. Opt for 85% lean; the fat enriches the meat, enhancing the dish's overall flavor and texture. And don't stress about the fat—post-cooking, it's easy to skim off any excess. Baking Soda: Helps tenderize the beef by locking in moisture, making it more succulent.

Do I need to cook chicken before putting in slow cooker? ›

Totally up to you. While chicken is meant to be slow cooked from raw, many do like to just brown or sear it first. This can help to lock in moisture, speed up cooking time or simply to improve visual appearance of the finished dish. Keep in mind that chicken will release a lot of liquid during cooking.

Why can't you put raw meat in a slow cooker? ›

If you simply pop some raw meat in your slow cooker, it won't have a chance to brown, which adds some much-needed flavor and cuts down on plenty of unappealing grease. Instead, you're better served by browning raw meat in a skillet before adding it to the slow cooker with your other ingredients.
